Let there be love. Cheesy Avocado love.
There is just something extremely kind and comforting about a warm, gooey and oh-so-cheesy Mac ‘n Cheese. For most it’s the first dish they ever learn to cook, for many it’s the only dish they will ever know how to cook. It’s the dish that gives a tight hug when you are in need of some love whilst being the dish that gives a delicious high-five when things are going right. And the most glorious thing about it? Everyone has their own signature style to it. There is the cheesy béchamel variety, yellow cheese, white cheese even mozzarella choices. I myself was raised on a cheesy tomato sauce bake. This is a food series to pay homage to the great and glorious mac ‘n Cheese, paying tribute to the oldies, but also the less traditional species. And what is a better way to start than with some guacamole?
Apart from being extremely easy the creaminess of the guac gives a consistency that can only be likened to double cream. Without its repercussions of course. In this sense feel free to mix and swap around ingredients to suit your particular taste buds as the guac is essentially a delicious blank canvas for you to play with.
1 Ripe Avocado (mashed)
1 Large red onion
1 Triangle brie cheese
Salami/bacon (to taste)
Macaroni (as much as you hunger for)
A drop of olive oil
Salt, pepper, thyme, oregano
A drop or two of lemon juice
Preheat oven to 180 degrees. Finely chop onion and fry on olive oil until soft. Add the salami and cook until fat just starts melting and mixing with onions. Set aside. Cook macaroni until al dente, so that it is slightly firm when bitten, remember you are going to bake it as well. Mash avocado and spice with salt, pepper and lemon juice to taste. Slice brie cheese in small pieces. In an oven proof dish, mix guacamole and cooked macaroni until all the tubes are covered. Add salami and onion mix as well as brie cheese. Stir well. Sprinkle thyme and oregano to taste. Bake for 20-30 minutes. Enjoy it while it’s hot and gooey!
