Fudgy Chickpea Brownies

It’s basically health-food.

I’ve been on quite a chickpea obsession these past few months. It’s just such an amazing ingredient, basically a gift that keeps on giving whether you are looking for salty. sweet, chewy or crispy. I think the one thing every pantry aught to have is a can or ten of chickpeas. Not only are they cheap, easy to use and super versatile, they are actually quite healthy being pumped full of protein and iron. It’s a super food, and not only because they can produce fudge and brownies in the same breath as salad. The great thing about this recipe (besides it being super easy) is that the end result is something between a brownie and fudge as it is super dense whilst at the same time soft and delicious. You are of course most welcome to swap the white chocolate for dark, I find, however that it adds a lovely caramel taste to it. This boy is seriously rich even though it is full of chickpea goodness. Enjoy in small quantities as a dessert or a sweet snack.

Ingredients:

1 Tin of drained chickpeas
1 Small ripe banana
1/3 cup of unsweetened cocoa powder
2/3 Cups light brown sugar
150 ml full fat yoghurt
2 Teaspoons baking powder
80g Chopped white chocolate

Method:

Blend everything together except for the white chocolate. Mix in the chopped chocolate and pour into a prepared baking tray (buttered up or baking paper) and bake for about an hour at 200 degrees. When it’s done, the top should be crispy, but not burnt and firm if you tap it. Let it cool completely and serve with a couple dollops of Creme Fraiche.

    These look delicious (as do your Chickpea Chews ) and I’ve been longing to try them since the summer when I discovered the recipes and your blog! Finally the need to make Christmas gifts will let me spend some of the time I’ve been pining to spend in the kitchen.

    Before I get started I wanted to double-check, your oven temperatures, they are in Celsius? Hope you’ll be able to confirm that guess soon!

    I’m such a chickpea fiend. They’re incredibly versatile (as your recipe demonstrates!). Did you know that in Germany chickpeas are referred to as ‘gigglebeans’! Perfect description for a delightful ingredient.
