(sweet potato & coconut cakes)
Sweet potato half moons filled with coconut syrup. There are always reasons to cheat on a diet, and this is probably the main one. Worth every calorie and drop of effort, these are cakes of love. And love doesn’t fatten, it creates joy and happiness 😉
Prep Time: 45 Minutes
1kg sweet potatoes, peeled
250 g cake flour
250 g grated coconut (desiccated if you don’t have fresh coconut to grate)
250 g white sugar
Mixed the grated coconut with sugar. Let the mixture stand while you prepare the sweet potato.
Boil the potatoes until cooked and soft. Mash them and mix in the flour to form a sticky dough. Roll out the dough to about 0.5cm thick. With a glass or cookie cutter, cut circles from the dough.
Put a teaspoon or so of the coconut/sugar mixture into each dough circle and close it carefully, sealing all the sides.
Deep fry each sweet potato cake until golden brown. Eat it while its fresh.
