How to make Alouda

(basil & agar milkshake)

'Alouda' - A basil seed flavoured milk drink

Alouda is a delicious milk-based drink that is refreshing as it is tasty. The basil seeds lightly flavour the milk, and doesn’t overpower with a herby tang.

Alouda is ideal for hot sunny afternoons as it is for cold evenings when the belly craves some love and tenderness.


Prep time: About 30 minutes


-1 liter of milk

-1 can sweetened condensed milk

-2 tablespoon of toukmaria (basil seeds)

-1/4 stick agar

-1 teaspoon vanilla extract


Boil half a liter of water and cook agar 5 minutes in boiling water then put in a bowl to cool.

Put the milk and sweetened condensed milk in a saucepan and warm when its starts to boil add the vanilla essence and remove the pan from heat, cool and then refrigerate.

In a large bowl of water put the toukmaria and let rise. When the agar is solid enough grate it. Then put the cold milk into a glass, a tablespoon of toukmaria and a tablespoon of grated agar, it is ready.
